Thai White Bean Thai Red curry

Ingredients:

1 x tin Cannelloni Beans

1 x tin Chickpeas

1 x tin coconut milk/cream

1 red capsicum

2 medium carrots

2 small sweet potato

1 onion

Tspn crushed garlic

2 tbsp Thai red curry paste

Tbsp Coconut oil (cooking)

Cooking instructions:

  1. Chop up the onion, carrots and sweet potato

  2. In a frying pan, add the oil and cook onion with garlic

  3. Then add the Thai red curry paste.

  4. Next add the capsicum, carrot and sweet potato and cook for 5 minutes

  5. Add the beans, and cook for 5 minutes

  6. Add the coconut milk, bring to boil, then simmer for 10-15minutes or until veggies soften.
