Mexican Quinoa Veggie Stir fry
Ingredients:
2 cups cooked quinoa
2 medium carrots (chopped)
1 large Zucchini (chopped)
tin corn
1 capsicum (you can choose colour)
Tin crushed tomatoes
1 onion (chopped)
TSN crushed garlic
Tbsp smoked paprika (or more)
Juice of 1 lime
Cooking instructions:
Cook up the quinoa and cool off
Cook the onion in a large pot or pan with garlic and smoked paprika
Add the other veggies, cook for 5 minutes
Add the quinoa, and stir through, cook 5 minutes
Add the lime juice and maybe more paprika
You can add more or remove some veggies to this dish.
If you like it spicier then add some chilli flakes or fresh chilli.
