Lime Coconut Mini Pies - No Baking
Ingredients:
Filling:
1 1/2 cups Cashews (soaked for 1-2 hours)
1 x Tbsp Maple syrup
2 Tbsp Coconut oil
Zest of 3 Limes
3 Tbn Lime juice
Crust:
1/2 cup Dates
1/2 cup Pecan or walnuts
3/4 cup oats
1-2 tbsp chia seeds
1 1/2 tbsp coconut oil
Top:
Sprinkle some zest of lime
Instructions:
Crust - Add dates, pecans, oats, coconut oil to the food processor
Place this crust in mini trays and place it in the freezer
Filling - Mix the Cashews, lime juice, zest, maple, coconut oil and blend
Pour the filling on top of the trays (crust)
Place in freezer for few hours, then in the fridge
