Lime Coconut Mini Pies - No Baking

Ingredients:

Filling:

1 1/2 cups Cashews (soaked for 1-2 hours)

1 x Tbsp Maple syrup

2 Tbsp Coconut oil

Zest of 3 Limes

3 Tbn Lime juice

Crust:

1/2 cup Dates

1/2 cup Pecan or walnuts

3/4 cup oats

1-2 tbsp chia seeds

1 1/2 tbsp coconut oil

Top:

Sprinkle some zest of lime

Instructions:

  1. Crust - Add dates, pecans, oats, coconut oil to the food processor

  2. Place this crust in mini trays and place it in the freezer

  3. Filling - Mix the Cashews, lime juice, zest, maple, coconut oil and blend

  4. Pour the filling on top of the trays (crust)

  5. Place in freezer for few hours, then in the fridge
